Interesting design! I was just talking with @bar earlier today about ways to make that part of the dis-assembly faster due to the tight clearances with the 2 internal rod-facing screws.
Do you know if the triangular gusset and side screws are necessary to the structural integrity? It would make it that much faster to dis-assemble if it is strong enough.

I would love to have a version that had one or two large bolts instead of a
bunch of tiny ones

I didn’t include any as what you are bracing against is preventing the rod from
tipping, since you are clamping around the rod instead of pushing down on the
end, there should be pretty much zero vertical force.
