Does anyone have a recommendation for what kind of glue might work well to attach this kind of non-slip foam to wood?

Honestly, I’d just use a hot glue gun. I use hot glue a lot in the shop. It sticks to wood really well and would also provide anti-slip properties, and it’s cheap and dries fast.

if you do a quick search for ‘foamies’ or ‘poor man’s fiberglass’ you will find
a community that builds campers and trailers from foam, they have a lot of
videos testing the strength of different glues. I’m in the middle of moving so I
can’t easily pull up my references.

I’d look for car interior upholstery and headliner adhesives, that’s pretty much exactly what they are used for.
That is great to hear! I was thinking of giving one of those spray adhesives a go, but they are a little pricey so I wanted to hear if they were actually any good
Yes, they can be very strong! I used the 3M one (I think) 20+ years ago on my vintage mustang and it’s still holding up. Two pro tips: 1) make sure to wear gloves, 2) sometimes doing a base layer on each side then letting it dry a bit helps before spraying again and adhering the two. I think sometimes the substrate absorbs some glue and this helps prevent that.
